Vellarika Rice/ Dosakai Rice/ Southekai bath/ Cucumber Rice

Hi all,
Cool your senses this summer with this Cool Cucumber Rice and enjoy! This is actually an authentic recipe of Karnataka

Ingredients: (See picture)

Rice : 1.5 cup
Cucumber(fat long ones) : 2 Nos
Coriander seeds (Malli,Dhaniya ) : 3 spoons
Cumin seeds (seeragam,Jeera ) : 1 spoon
Channa dal (kadalai paruppu, senega pappu) : 1 spoon
Ural dal (ulundhu, mina pappu) : 1 spoon
Cinnamon (Pattai, Chaka) : few (4 or 5 small pieces)
Cloves (Krambu, Lavangam) : 2
Marathi Mogga : half
Red chilly : 1
Salt, oil as required

Method :

1. Cook Rice separately and keep it aside.
2.Cut cucumber vertically and remove the seeds.
3. Cut the cucumber into small pieces may be in the size of small ice cubes and keep it aside.
4. Fry all the ingredients except cucumber with little oil in a pan till it gives a nice aroma. Tranfer it into a plate and allow it to cool.
5. Now in the same pan, add little oil and fry the cut cucumber pieces till it becomes tender and keep it aside.
6. Grind the fried ingredients to fine powder.
7. Add the powder and salt to the cooked rice and mix thoroughly.

Serve it hot.

Guava Chips

Hi friends,
You should have started to see more of Guava on the streets these days. Guava is cheap comparatively and has very good health benefits even for diabetic patients.

Here I give you the recipe for Guava Chips – simple and tasty...

Ingredients:

Two Guava fruit with small or no seeds (Guava not yet ripened)
Maida (All purpose flour) – Rice flour – Corn flour – 2 tea spoons each
Ginger powder – 1/4 teaspoon
Chilly powder – 1/2 teaspoon
Asafoetida – 1/4 teaspoon
Oil, Salt as needed

Method:

1. Cut guava into thin round slices.
2. Add salt, ginger powder, chilly powder and asafetida and mix it.
3. Keep aside for 10 minutes. Now you could see little water in it.
4. Add all the flours and mix it thoroughly. See to it that the guava slices do not break.
5. Deep fry in oil.

Enjoy the chips with/without tomato ketchup.

Milagu/Miriyalu Vadai/Vada

Hanumanth Jayanthi is approaching - April 20th and so it is time to post recipe for Milagu vadai - a favourite of Hanuman.

Method:

1. Soak 1 cup Ural dal(Uzhundu/minapappu) for about 2 hrs.
2. Grind it coarsely with little water (just enough to get it grinded).
3. Take 1/4 cup rice flour and fry it for 2 minutes.
4. Grind 10 black peppers (miriyalu) together with very little jeera coarsely.
5. Add the rice flour and pepper mixture to the urad dal paste.
6. Take a plastic sheet or a small banana leaf. Apply oil to the leaf and put urad dal paste and make it flat and round in shape.
7. Now dip ur index finger in water and make a small hole in the center.
8. Deep fry in oil.

Offer it to Hanuman and have it with coconut chutney.

Soft idly


Hi all,
To make your all time favourite Idly - soft, add a little aval ( poha) may be 3 spoons to 4 cups of rice and 1 cup urad dal (add one teaspoon feungreek seeds - methi - vendhayam to dal) and soak for 4 to 6 hrs. Soak (rice + poha) separately and (dal+methi) separately.

Also, Grind rice first and then dal. Allow it to ferment overnight.

This batter makes really soft idlis.
